Easy Meals for Truck Drivers
Do you love meatloaf? Who doesn’t? It’s easy to make, easy to store, and reheats well, which makes it perfect for a truck driver’s schedule. Not to mention, ground beef is a wonderful source of protein.
When you make meatloaf in a muffin tin, you can make various changes to keep this recipe a go-to and still have some fun variety. Plus, these are good for around five days when refrigerated and are freezer-friendly.
Ingredients:
- Ground Beef.
- Chopped Green Pepper add as much as you’d like.
- Chopped Onion add as much as you like but keep in mind that onion can quickly become a dominant flavour.
- An Egg to add moisture.
- BBQ Sauce about ¼ cup per pound.
- Breadcrumbs (optional) – While I’m not a fan of stretching beef with filler, seasoned breadcrumbs can add flavour.
- A touch of black pepper.
How To Make Them
- Mix your ingredients in a large bowl.
- Add approximately 1/3 cup of mix to each muffin cup in an average muffin tin. You want the top of the beef to be just below to top of the tin.
- Bake at 375 degrees for 17 minutes or until completely cooked.
Once your meatloaf is cooked and cooled, store them in a container and refrigerate or place them in the freezer.
When it’s time to enjoy them, thaw completely. You can microwave them or heat them on a grill or lunchbox warmer. Add some BBQ sauce on top and enjoy!
If you want to have fun with your meatloaf singles, take some mashed potatoes (which reheat well) and add on top like you’re icing a muffin. You can also try some variations by adding additional spices, different BBQ sauce, and even some gravy on top.
